Pumpkin Muffins

Cooking Together

Healthy Pumpkin Muffins

1 3/4 cups whole wheat pastry flour
3/4 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp ground ginger

1/3 cup flax seed oil or vegetable oil
3/4 of a 15 oz can of pumpkin
1/3 cup water
2 eggs, beaten slightly

Combine flour, brown sugar, soda, salt, baking powder, and spices and mix well.

Add oil, pumpkin, water, and eggs. Stir to moisten ingredients, then beat well with an electric mixer.

Stir in add-ins such as chocolate chips, dried fruit, or nuts. (My kids would mount a rebellion if I left out the chocolate chips.)

Spoon batter into greased muffin tins and bake for 20 minutes at 350 degrees. Makes 12 medium muffins or 18 small muffins.
